  1. I made these once. I found they didn’t have enough “structure” for stuffing into a jersey pocket and eating on a long ride. The bars tended to go mushy or just fall apart when opened. I guess if your team car is handing fresh ones to you on the go or you’re grabbing a musette from the feed area they’d be fine.

    I find baked slices hold their shape much better. I wonder if you can do a baked rice cake? I do like the look of the Scratch foil paper though!
